What You'll Need:

  • 1 medium head cauliflower, broken into buds (4 cups)
  • 2 cups fully cooked ham, cubed
  • 1 can (3-oz) mushrooms, drained
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour
  • 1 cup milk
  • 1 cup cheddar cheese, cubed
  • 1/2 cup sour cream
  • 1 cup soft bread crumbs (1-1/2 slices)
  • 1 teaspoon softened butter

Step by Step:

  1. In a covered saucepan, cook cauliflower in salted water for 10-12 minutes, drain.
  2. Combine ham and mushrooms.
  3. Melt butter in a medium saucepan, stir in flour, add milk and cook until mixture thickens.
  4. Add cheese and sour cream to sauce, stir until cheese melts.
  5. Combine with cauliflower and ham mixture and pour into a 2-quart casserole.
  6. Combine bread crumbs and butter. Sprinkle on top.
  7. Bake uncovered at 350 for 40 minutes or until hot and bubbly.

Yield: 6 servings
